This is Rosh Hashana's claim to fame in our house: my mother’s honey, spice and a whole bunch of everything nice honey cake. It’s not your typical, run-of-the-mill honey cake, but it’s traditional in its own way. Super moist and flavorful, it’s about to become your family's traditional honey cake, too!


Honey n' Spice Cake

2 c flour

1 tsp baking soda

1 tsp baking powder

1 tsp cocoa

1 tsp cinnamon

1/2 tsp cloves, ground

1/2 c sugar

1/2 c brown sugar

2 eggs

1/2 c oil

3/4 c honey

1 c strong coffee


Preheat oven to 375°F.

In a bowl, add flour, baking soda, baking powder, cocoa, cinnamon, and cloves. Beat sugar, brown sugar, eggs, oil and honey. Alternate between adding the cooled coffee and dry mixture. Beat five minutes. Bake at 375° for 40 minutes in baby loaf pans or one hour in regular loaf pans, until a toothpick inserted comes out clean.
